8th Wonder Hummus & Veggies
Hummus is the new health comfort food. It's quick to prepare and requires no cooking! Great for entertaining a crowd or as single serve lunch dish, this 8th Wonder Hummus & Veggies recipe is sure to be a favorite! It is an easy option for weekly meal prepping, too.

TIP: If serving a crowd or meal prepping for the week, simply double or triple the ingredients. The recipe below creates two 8 ounce servings.
HUMMUS INGREDIENTS
1 can Garbanzo Beans (Chick Peas)
2 oz. Olive Oil (divided)
1 Garlic Clove (crushed)
1/2 tsp. 8th Wonder Spice Blend
1/2 tsp. Sea Salt
Parsley Leaves
VEGGIE TRAY OPTIONS
Carrots
Celery
Broccoli
Sweet Potato Slices
Cucumber
Zucchini/ Squash Slices
Red or Green Bell Pepper
Other: Pita Bread, Pretzels
INSTRUCTIONS
Drain the can of garbanzo beans, but retain the liquid in a separate bowl.
Using a food processor or blender, combine the garbanzo beans, 1 ounce of olive oil, garlic clove, 8th Wonder Spice Blend, and sea salt.
Starting with a low setting, blend the ingredients. Add back the reserved bean liquid as needed to achieve a smooth creamy consistency.
Transfer hummus into a bowl. Top with a drizzle of olive oil, a pinch of 8th Wonder Spice Blend, and parsley leaves. For best results, refrigerate for an hour or more before serving.
Serve with desired vegetables, pita bread, and/or pretzels. ENJOY!
